Paleo Chocolate Chip Cookies



I don’t know about you, but I only have free access to cookies two times a year, (I will happily accept cookies yearly though). Those times are Christmas and Girl Scout Cookie season.

I swear those little entrepreneurs are up to something. You finish your last Christmas cookie & new years hits & you’re like, “ok, new year- new me.” But unlike the Christmas seasons, there's actual representatives at your grocery store, your favorite pet store, your hair salon, your work, and they are trying so hard to get you to buy some. And it’s for a good cause, right?


This time, they have something on you, eye contact. How often do we have someone trying to sell you something that isn’t on a computer screen?


So, why did I do a 30 day detox on literally the hardest month to be strong? To be honest, I forgot. Girl Scout season always seems to sneak up on me. So, instead of trying to fight cookies with kale, I figured, “why not just make healthy(ish) cookies, how hard can it be?”


My naive self goes onto Pinterest only to find the most bizarre recipes. Like, thank u, next i’m not about to add cauliflower to my recipe. I’m not trying to lose weight by these cookies, i’m just trying not to gain weight.


So, I figured, why not pull the things I like out of all the recipes & make one amazing recipe. Of course this took a couple tries, but I think I found the most jokes-on-you-there’s-no-gluten-in-these cookies ever!



Before I say anymore, let me tell you, I made a bunch of college students try these & they had no idea it was gluten-free, dairy-free, grain-free, & paleo friendly.


They were all very impressed with my baking ability (ok rude) & then they were like “... wait, aren't you on like a diet?”

Did I deceive them? Maybe. In the name of science



 

Paleo Chocolate Chip Cookies

gluten-free, grain-free, dairy-free

approx 12 cookies

 

Ingredients


1 cup of almond flour

¼ cup of coconut flour

1 teaspoon of baking soda

¼ teaspoon of salt

4 tablespoons of coconut oil, room temperature

¾ cup of coconut sugar

3 tablespoons of almond butter

1 ¾ teaspoons of pure vanilla extract

1 cage-free egg, room temperature

½ cup of dairy-free dark chocolate chips (who really measures this)


 

Directions


  1. Stir together the almond flour, coconut flour & baking soda

  2. In a separate bowl, mix the coconut oil & coconut sugar together with an electric mixer until well combined (make sure the coconut oil is room temperature, or it will be difficult to combined these two)

  3. Add in the almond butter and vanilla extract with the coconut oil and sugar, beat until well combined

  4. In the same bowl, stir in the room temperature egg

  5. Stir in the flour adding a little bit at a time until well combined

  6. When everything is incorporated, stir in the chocolate chips

  7. Place the dough into the refrigerator for 30-40 minutes until the dough is firm (I know this sounds lame, but trust me on this one)

  8. Preheat the oven to 350°F

  9. Using a greased pan, roll dough into balls, then press the ball lightly with your hand

  10. Bake for 11-14 minutes
